Cottage use whole fruit to make their traditional range of jams. Cooked
in small open pans the fruits are quickly cooked to retain their full
flavour.
Each pan is stirred repeatedly by hand with a wooden spoon and it takes
a keen eye and many years' of experience to spot exactly the right moment
of consistency to ensure correct setting.
