The new year at Thursday Cottage starts with the sweet tang of citrus as cooks prepare some of our ten marmalades including: traditional Seville Bitter Orange, Pink Grapefruit medium cut, the intriguing Blood Orange Marmalade made with oranges from the slopes of Mount Etna, the warming Grapefruit with Stem Ginger and the Vintage Orange thick cut Marmalade.
For those cooks who like the challenge of making their own marmalade it is the time to enter The World’s Original Marmalade Awards, a chance to explore unusual ingredients or perfect a family recipe with a favourite citrus fruit – for entry classes and details please see:
www.dalemain.com/marmalade-awards entry closing date is 11th February 2022
Last year, marmalade makers from across the world including Brazil, Czech Republic and Zambia, overcame the problems of 2021 to send 3,000 jars to the founder of the Awards: Jane Hassell-McCosh at Dalemain Mansion. An encouraging number of entries were from young people and their skills and ingenuity were recognised when the overall winner Flora Rider aged nine years was announced as the youngest ever winner of the Awards. Flora’s winning recipe for a light Seville Orange & Orange Blossom Marmalade was replicated by the cooks at Thursday Cottage and sold at Fortnum & Mason and at Dalemain Mansion.
