Apple Day - Apple Cake

The perfect homemade bake for Apple Day or anytime you crave a comforting treat. With a golden crust and a soft, fragrant interior, each bite delivers the perfect balance of sweetness and apples. Serve it warm with a scoop of vanilla ice cream or a drizzle of Thursday Cottage Toffee Apple Curd for an irresistible dessert that feels like a hug from the inside out.

180g all -purpose flour
11/2 tsp baking powder
½ tsp baking soda
½ tsp salt
120g unsalted butter softened
200g caster sugar
2 large eggs
1 tsp vanilla extract
90ml vegetable oil
100ml semi-skimmed milk
2 medium apples peeled, cored, and thinly diced and dusted in flour
1 tbsp of icing sugar for decoration

45g caster sugar & 45g brown sugar
1tsp ground cinnamon
60g unsalted butter, cold and cubed

Toffee Apple Curd

In a bowl, mix the flour, granulated sugar, brown sugar, and cinnamon. Add the cold butter cubes and using a pastry cutter or your fingers, combine until it resembles course crumbs. Set aside in the fridge.

Pre-heat your fan oven to 175c. grease and line a 9-inch round or square cake tin.
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
In a large bowl, beat the butter and sugars together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Mix in the oil and milk until combined.
Gradually add the dry ingredients to the wet mixture, mixing just until combined. Fold in the apple cubes throughout the batter.
Pour the batter into the prepared pan and spread it evenly. Sprinkle the crumble topping evenly over the cake batter.
Bake for 40-50 minutes, or until a toothpick inserted in the centre comes out clean.
Serve warm with our Toffee Apple Curd or vanilla ice cream
