Blackcurrant & Apple Bread & Butter Pudding

This classic bread and butter pudding is a comforting and delicious dessert. The blackcurrant jam adds a touch of sweetness, while the apples provide a refreshing texture. Enjoy it warm for a comforting treat.

Ingredients
6 slices of fruit bread
35g unsalted butter
1 jar Thursday Cottage Blackcurrant Jam 340g
2 eating apples
30g soft brown sugar
2 eggs
2tsp vanilla extract
500ml milk
Directions
Spread the butter over the slices of fruit bread, topping each one with a generous slather of Blackcurrant Jam.
Slice the apples as thinly as possible. Layer the bread and apples in your baking dish, alternating between fruit and bread as you go.
In a large jug, whisk together the eggs and soft brown sugar. Add the milk and vanilla extract, stirring until well combined.
Pour the milk mixture over the bread. Leave to soak for 30 minutes. In the meantime, preheat the oven to 200C/180C (fan)/gas mark 6.
Bake the pudding for 45-55 minutes, or until the custard is set with a slight hint of wobble. Serve warm, with a dollop of ice cream.
