Ingredients
1kg pork belly
10g salt
5g pepper
20ml vegetable/sunflower oil

200g Thursday Cottage Spiced Cherry & Amaretto Jam
20ml soy sauce
10ml rice/white wine vinegar
5g minced garlic
1 pod star anise
30ml water
1tbsp sesame seeds
1tbsp chopped chives
Directions
Preheat the oven to 180/160C (fan)/gas mark 4.
Cut the pork belly into 3cm wide pieces. Toss them in a bowl with the salt, pepper and oil.
Scatter the pork belly pieces over a baking tray and cook for 1 hour, turning halfway through.
In a small saucepan, combine the glaze ingredients and simmer for 7 minutes.
Remove the pork from the oven and coat it with the glaze.
Increase the oven temperature to 200C/180C(fan)/gas mark 6. Cook for a further 20 minutes, turning halfway.
Finish with a sprinkling of sesame seeds and chopped chives. Serve warm.
