A rich and indulgent dessert, this slice combines the sweetness of cherry jam with the nutty crunch of chestnuts. Perfect for sharing with loved ones during the holiday season.

Ingredients

125g plain flour
1 tablespoon icing sugar
- 75g unsalted butter, cold and cubed
- 1 egg yolk
1 teaspoon vanilla extract
Pinch of sea salt
110g Spiced Cherry & Brandy Jam

200g ready-to-use chestnuts
2 egg whites
100g caster sugar
25g desiccated coconut
1/2 teaspoon sea salt

20cm x 20cm shallow baking tin

Handheld electric whisk
Directions
Preheat oven: Preheat oven to 180°C/fan 160°C/Gas mark 4.
Prepare base: Combine flour, icing sugar, butter, egg yolk, vanilla extract, and salt in a food processor. Pulse until a soft dough forms. Roll out to a 20cm x 20cm square and place in a greased baking tin. Prick with a fork. Bake for 20 minutes, or until lightly golden. Cool slightly before spreading with jam.
Make topping: Pulse chestnuts in a food processor until finely chopped. Beat egg whites and sugar until thick and glossy. Gently fold in chestnuts, coconut, and salt.
Assemble: Spread the chestnut topping over the jam layer. Bake for 25-30 minutes, or until the top is light nut brown and firm.
Cool and serve: Let cool completely before cutting into squares.
