Damson Dodgers

These classic Damson Dodgers are a delicious and nostalgic treat. The buttery biscuits are filled with a sweet and tangy damson jam, creating a perfect balance of flavors. Enjoy them with a cup of tea.

Ingredients
175g plain flour
Pinch of sea salt
75g icing sugar
125g cold butter, cut into small pieces
1 egg yolk
Finely grated zest of 1 small orange
3-4 tablespoons Thursday Cottage Damson Jam

2 large baking sheets lined with baking parchment
5-6 cm round or square biscuit cutter
Directions
Make dough: Combine flour, salt, icing sugar, butter, egg yolk, and orange zest in a large bowl. Rub butter into flour mixture until it resembles fine breadcrumbs. Form a soft, smooth dough. Chill for 30 minutes.
Roll and cut: Divide dough in half. Roll each half between lightly floured greaseproof paper to about 3mm thickness. Cut into equal pieces using a biscuit cutter.
Bake: Place biscuits on baking sheets and bake for 15-20 minutes, or until just firm and lightly coloured.
Assemble: Place a teaspoonful of damson jam in the center of half the biscuits. Top with remaining biscuits. Bake for another 5 minutes, or until jam is hot and biscuits are stuck together.
