Appley Mincemeat Puff Pastry Tarts

A festive twist on traditional mince pies. Made with flaky puff pastry, sweet mincemeat, and juicy apple slices, they are perfect for holiday gatherings or as a special treat.

Ingredients
1 x 500g pack puff pastry
8 tablespoons Thursday Cottage mincemeat
6 medium-sized Cox or Russet apples, cored and sliced
200g icing sugar
1.5 tablespoons warm water
1 large baking sheet, well greased
Directions
Preheat oven: Preheat oven to 200°C/Gas Mark 6.
Prepare pastry: Cut the puff pastry in half lengthwise, then cut each half into 12 equal squares.
Assemble tarts: Place a square of puff pastry on a greased baking sheet. Add 1 teaspoon of mincemeat to the centre. Arrange apple slices on top of the mincemeat.
Bake: Bake for 10-15 minutes, or until the pastry is golden brown and puffed up.
Glaze: While the tarts are still warm, mix the icing sugar and warm water until smooth and glossy. Drizzle over the cooled tarts.
