Ingredients

FOR THE BASE

200g plain sweet biscuits
75g melted butter
50g desiccated coconut

FOR THE CAKE

310g lime curd
Icing sugar, for finishing
Fresh lime, sliced and grated peel, for garnish (optional)

EQUIPMENT

20cm loose-bottomed deep cake tin
Baking parchment
Rolling pin
Blender

Directions

Preheat oven: Preheat oven to 180°C/Gas mark 4.
Make base: Crush biscuits in a plastic bag. Combine with melted butter and coconut. Press into the prepared tin. Bake for 15 minutes. Set aside to cool.
Prepare filling: Blend lime curd and Mascarpone cheese until smooth. Pour over the cooled base.
Chill: Chill in the refrigerator for 6-24 hours.
Serve: Dust with icing sugar and garnish with fresh lime slices and grated peel, if desired.
