These sticky and delicious Chelsea buns are a classic teatime treat. The sweet and tangy blood orange marmalade adds a burst of flavor, while the currants and walnuts provide a delightful texture. Enjoy these warm and fresh from the oven.




Marmalade Chelsea Buns

Ingredients

    • 400g strong white flour, sifted

    • 50g caster sugar

    • Pinch of sea salt

    • 1 x 7g sachet of quick yeast

    • 50g melted butter

    • 150ml milk

    • 1 lightly beaten egg

    • Half a jar of Thursday Cottage Blood Orange Marmalade

    • 75g currants

    • 75g walnuts

    • 1 teaspoon mixed spice

    • FOR THE ICING

    • 100g sifted icing sugar

    • 2 teaspoons water

    • 20cm x 20cm shallow baking tray, well greased with butter

    Directions

    1. Make dough: In a large bowl, combine flour, sugar, salt, yeast, melted butter, milk, and beaten egg. Mix until a smooth dough forms. Knead on a floured surface for 5 minutes. Place in a lightly oiled bowl, cover with cling film, and let rise in a warm place for 1.5 hours, or until doubled in size.

    2. Prepare filling: Spread marmalade over the dough, sprinkle with currants, walnuts, and mixed spice.

    3. Roll and slice: Roll the dough into a 20cm x 25cm rectangle. Cut into 9 equal slices.

    4. Let rise: Place slices cut-side up in a greased baking tin. Let rise for 45-60 minutes.

    5. Preheat oven and bake: Preheat oven to 200°C/Fan 180°C/Gas Mark 6. Bake for 20-25 minutes, or until golden brown.

    6. Glaze: While still warm, brush with icing.

    7. Enjoy: Remove from the tin and enjoy!
