Passionfruit Cheesecake

This is a delightful dessert that combines the creamy richness of cheesecake with the tropical taste of passionfruit. The cheesecake filling itself is smooth and creamy. The combination of cream cheese, double cream and white chocolate spread, perfectly complements the tropical notes of passionfruit.

Ingredients
250g Digestive biscuits
150g Unsalted butter
250g Cream cheese
120g Thursday Cottage Passionfruit Curd
120g Thursday Cottage White Chocolate Spread
120ml Double cream

2tbsp Thursday Cottage Passionfruit Curd
50g Strawberries
50g Raspberries

Directions
Crush the biscuits into crumbs. Melt the butter and stir into the biscuit mixture.
Tip the butter and biscuits into a 9” round or rectangular tart tin, pressing it into the sides
Mix together the passionfruit curd, white chocolate spread, and cream cheese. Set aside.
Whip the cream until thick, glossy peaks form. Fold the cream into the curd mixture, being mindful not to over-beat.
Spoon the filling into the tart case and smooth with a pallet knife. Whip the extra double cream and pipe a pattern over the tart using a piping bag fitted with a star nozzle.
