A delightful combination of tangy and sweet flavors that can elevate any breakfast or dessert table. The Passionfruit curd, with its vibrant yellow colour and tropical aroma, provides a luscious contrast to the light and airy strawberry puffs.


Serve them with a dusting of powdered sugar and a few fresh strawberries on the side for an elegant presentation that is sure to impress your family and friends.

Passionfruit Curd and Strawberry Puffs

Ingredients

    • 320g puff pastry sheet

    • 12 tsp Thursday Cottage Passionfruit curd

    • 400g strawberries (small)

    blank

    • a dusting of icing sugar

    • Mint leaves

    • 1 Egg wash ((1 egg yolk + 1 tbsp milk))

    Directions

    1. Preheat the oven to 200°C (fan). Unfold the puff pastry and cut it into 12 equal squares (approximately 8cm x 8cm).

    2. Using a knife, score a 1 cm border inside each square, leaving a 1 cm gap between the outer edge and the inner square. Cut just the corners without connecting the lines in the middle.

    3. Place 1 tsp of passion fruit curd in the centre of each square, then place a small strawberry within the uncut border.

    4. Fold the outer corners of the square so they meet in the centre.

    5. Place another strawberry on top, and press gently to ‘seal’ it

    6. Transfer the puffs to a baking tray lined with parchment paper and brush them with egg wash.

    7. Bake for 13-15 minutes, or until golden and puffed. Allow to cool, then dust with icing sugar and garnish with mint leaves if desired. Enjoy!
