Salted Caramel Swirl Banana Bread

This recipe takes the classic moist banana loaf and swirls in ribbons of Thursday Cottage Salted caramel, creating a rich, buttery masterpiece that’s equal parts cozy and indulgent. Perfect for brunch, dessert, or just a sweet moment to yourself.

Ingredients
3 ripe bananas, mashed
100g soft brown sugar
2 large eggs
100g melted butter
1tsp vanilla extract
220g plain flour
1 ½ tsp baking powder
½ tsp bicarbonate of soda
1 tsp ground cinnamon
Pinch of salt
120g Thursday Cottage Salted Caramel Spread
Flaky sea salt, to finish
Directions
Preheat the oven to 180C/160C(fan)/gas mark 4. Line a 2lb loaf tin with baking paper or a loaf tin liner.
In a bowl, whisk together the mashed bananas, brown sugar, eggs, melted butter, and vanilla
In a separate bowl, mix together the flour, baking powder, bicarbonate of soda, cinnamon, and salt.
Combine the wet and dry ingredients, folding gently until just combined.
Pour half the batter into the cake tin and dot half the salted caramel spread over the top, swirling lightly with a knife.
Pour in the remaining batter and repeat with the remaining caramel, swirling again.
Pop the tin in the oven and bake for 50-60 minutes, or until a skewer inserted into the centre comes out clean (a little caramel on the skewer is fine).
Leave the cake to cool in its tin for 10 minutes before transferring to a wire rack.
Sprinkle with flaky sea salt and enjoy plain or with a slather of butter or chocolate spread.
