This light and flavorful smoked mackerel pâté is a perfect appetizer or light lunch. The tangy gooseberry jam adds a delightful contrast to the smoky fish, while the cream cheese and crème fraiche create a smooth and creamy texture. Enjoy it with your favorite accompaniments.

Ingredients
2 smoked mackerel fillets
140g light cream cheese, softened
2 tablespoons crème fraiche
2 tablespoons Thursday Cottage Gooseberry Jam
1 lemon

Warm pita bread or Crusty French Stick
Fresh salad leaves

Directions
Prepare mackerel: Remove skin and any bones from the smoked mackerel fillets. Flake the fish with a fork.
Combine ingredients: In a bowl, combine flaked mackerel, softened cream cheese, crème fraiche, and 1 tablespoon of gooseberry jam. Mix well.
Fold in remaining jam: Gently fold in the remaining tablespoon of gooseberry jam, leaving some larger pieces of gooseberry visible for texture.
Chill: Transfer the pâté to a serving dish and refrigerate for at least 1 hour to allow the flavors to meld.
Serve: Serve chilled with warm pita bread (optional), fresh lemon wedges, and salad leaves (optional).
