Smoked Mackerel & Gooseberry Pâté

Ingredients

  • 2 smoked mackerel fillets

  • 140g light cream cheese, softened

  • 2 tablespoons crème fraiche

  • 2 tablespoons Thursday Cottage Gooseberry Jam

  • 1 lemon

  • Warm pita bread or Crusty French Stick

  • Fresh salad leaves

  • Fresh Chilli’s

Directions

  1. Prepare mackerel: Remove skin and any bones from the smoked mackerel fillets. Flake the fish with a fork.

  2. Combine ingredients: In a bowl, combine flaked mackerel, softened cream cheese, crème fraiche, and 1 tablespoon of gooseberry jam. Mix well.

  3. Fold in remaining jam: Gently fold in the remaining tablespoon of gooseberry jam, leaving some larger pieces of gooseberry visible for texture.

  4. Chill: Transfer the pâté to a serving dish and refrigerate for at least 1 hour to allow the flavors to meld.

  5. Serve: Serve chilled with warm pita bread (optional), fresh lemon wedges, and salad leaves (optional).
